A Taste of Nostalgia: More Than Just a Recipe
There are certain flavors and aromas that instantly transport you back in time, much like a familiar song or a cherished memory. For me, the bright, uplifting scent of lemon baked into a sweet treat often brings me back to simpler times, evoking the same sense of comfort and joy I found in another passion: softball.
My high school years were largely defined by the softball diamond. For all four years, the field was my second home, a place where countless hours were spent perfecting swings, fielding ground balls, and enduring rigorous training. It wasn’t just a sport; it was a way of life. I meticulously cared for my special softball cleats, worn thin from practice, and carried my bat in a dedicated softball backpack that, for a skinny teenager, somehow made me feel like a superstar ready to conquer the world.
Our travel team crisscrossed the vast landscapes of Texas, competing in tournaments that pushed our limits and forged unbreakable bonds. I even caught the eye of a junior college in Kansas, receiving a recruitment offer to play at the collegiate level. (Though, I must admit, their biggest selling point being a new YMCA didn’t quite seal the deal for this Texas girl!) Looking back, it’s clear: during those formative years, I truly lived and breathed softball.
From Novice to Dedicated Player: The Journey of Improvement
My softball journey began in middle school, and from the moment I first stepped onto the field, I was completely hooked. What’s often forgotten in the highlight reels of later success is that I was, initially, quite terrible. I remember my very first coach, bless her patient heart, gently suggesting after our inaugural practice, “Maybe you should try throwing with your left hand for a bit.” And I’m unequivocally right-handed! That’s how genuinely bad I was.
But that initial struggle only fueled my determination. I practiced relentlessly, day in and day out. I cherish memories of my mom patiently sitting on a chair in our alley, tossing the ball with me for what felt like hours, helping me hone my dismal throwing arm. It took years of dedication, repetition, and sheer stubbornness, but gradually, I transformed from being “horrible” to “decent,” a personal victory that taught me the immense value of perseverance.
Forging Friendships That Last Beyond the Field
High school softball wasn’t just about the game; it was about the people. I became inseparable from a few of my teammates, forging friendships that transcended the boundaries of the field. We hung out constantly, our lives intertwined. Sleepovers at each other’s houses were a regular occurrence, filled with laughter and shared dreams. We carpooled to practices and games, turning mundane drives into singalongs and strategy sessions.
Our commitment extended even to the off-season, where our coach would make us join the cross-country team for grueling 6 AM runs. Those early mornings, pushing ourselves side-by-side, solidified a bond that was more like family than just teammates. And the most beautiful part of it all? Decades later, those friendships remain as strong and vibrant as ever.
Inspiration and Passing on the Passion
Among our circle, one of my best friend’s sisters stood out as a true softball phenom. She was truly exceptional, earning a full-ride scholarship to college to play. We all looked up to her, not just for her incredible talent on the field, but for her quiet confidence and leadership. (And, yes, the fact that she still had original Air Force 1s from the ’80s in her closet was pretty cool too, but mostly, it was her softball prowess that truly captivated us).
After a successful college career, she seamlessly transitioned into teaching and became a softball coach at a nearby high school. This was fantastic news for everyone. First, because her natural ability to guide and inspire others made her a born teacher. Second, because it meant more opportunities for me to indulge in one of my favorite pastimes: watching live softball games!
Reliving the Game: A Full-Circle Moment
Just the other night, we took the kids to one of her games, and oh, what an absolute blast it was! While I spent a good ninety percent of the time wrangling energetic children, the atmosphere, the cheers, and the sheer joy of being there were exhilarating. Hearing the girls from both teams chanting the same songs we used to cheer in high school was incredibly nostalgic. I found myself instinctively singing along, without even realizing it.
Every close play had me jumping up, shouting “Yeah!” and “Wooooohooooo!” without a second thought. It all came back so naturally, a deeply ingrained part of my past bubbling to the surface. I even had to sheepishly apologize to my friend who joined us for getting so incredibly animated. But what can I say? I genuinely, truly, enthusiastically love some softball, y’all!
This enduring passion for simple, genuine joys—whether it’s the crack of a bat on a spring evening or the bright burst of lemon in a homemade cookie—is what makes life so sweet. And it’s that very same comforting joy that I aim to capture in every bite of these Lemon Buttercream Sandwich Cookies.

The Perfect Lemon Buttercream Sandwich Cookies
Recipe by Kelley Grant
Yields: Approximately 15-20 sandwich cookies
Prep time: 20 minutes
Cook time: 8-10 minutes
Ingredients
- For the Cookies:
- 1 cup butter, softened
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 large eggs
- 2-1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- For the Lemon Buttercream:
- 1 cup butter, softened
- 4 cups powdered sugar (confectioners’ sugar)
- 2 tablespoons fresh lemon zest
- 3 tablespoons fresh lemon juice
- 2 tablespoons heavy cream or milk
Instructions
- Prepare for Baking: Preheat your oven to 350 degrees Fahrenheit (175°C).
- Cream Wet Ingredients: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the vanilla and almond extracts, then add the eggs one at a time, mixing well after each addition until fully incorporated.
- Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, cream of tartar, baking soda, and salt. This ensures even distribution of the leavening agents.
- Form the Dough: Gradually add the dry ingredient mixture into the wet butter mixture, mixing on low speed until just combined. Be careful not to overmix the dough.
- Shape and Bake: Drop tablespoons of dough onto a cookie sheet lined with parchment paper or a silicone baking mat. Lightly flatten each cookie with your hand or the bottom of a glass for a more uniform shape. Bake for 8-10 minutes, or until the edges are lightly golden.
- Cool Completely: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely. They must be entirely cool before frosting.
- Prepare Lemon Buttercream: While the cookies are cooling, prepare the lemon buttercream. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, lemon zest, lemon juice, and heavy cream (or milk). Beat on medium-high speed until the buttercream is light, fluffy, and smooth.
- Assemble the Sandwich Cookies: Once the cookies are completely cooled, scoop or pipe a generous amount of lemon buttercream onto the flat side of one cookie. Top with another cookie, gently pressing to create a delicious sandwich.
- Serve and Enjoy: Your delightful Lemon Buttercream Sandwich Cookies are ready to be savored! These are best enjoyed fresh or stored in an airtight container at room temperature for up to 3 days.
