Set-It-And-Forget-It Southwestern Stuffed Peppers

Welcome back, food enthusiasts! There’s something undeniably comforting about a dish that warms you from the inside out, a meal that promises ease and incredible flavor after a long day. And when it comes to ultimate comfort food, nothing quite hits the spot like a hearty, homemade meal that practically cooks itself. Today, we’re diving into the world of slow-cooked perfection with a recipe that is guaranteed to become a family favorite: **Southwest Crock Pot Stuffed Peppers**. This dish isn’t just easy; it’s a symphony of savory flavors, vibrant colors, and melt-in-your-mouth goodness that will have everyone asking for seconds.

Life can be a whirlwind, can’t it? As much as I adore creating and sharing delicious recipes with you, sometimes the everyday chaos of life takes precedence. It feels like ages since we last truly connected, and there’s so much I’ve been eager to share. Over the past month, things have certainly been in flux, underscoring my constant need for simple, comforting meals that don’t compromise on taste or quality. So, let’s grab a cup of coffee and catch up before we dive into this amazing recipe.

Life in Flux: The Austin Dream & Corpus Reality

For those of you who’ve been following along, you know our big plan was to move to Austin. Well, as life often does, it threw us a curveball. The house we had lined up in Austin unfortunately fell through. It was a real bummer, a definite “womp womp” moment for the whole family. So, for now, we’re still happily (and sometimes frantically) navigating life here in Corpus Christi. Just last month, when I took the kids for their flu shots, our pediatrician did a double-take. “I thought y’all moved?” he asked, genuinely surprised. I sighed, explaining, “We haven’t been able to find a suitable house yet.” He then looked at me with a serious expression, a hint of playful disbelief in his eyes, and said, “Aren’t you a real estate agent?”

I couldn’t help but laugh. “You’d think that would help, right?!” I retorted, highlighting the irony of a real estate agent struggling to find her own home. It just goes to show that even with professional expertise, the housing market can be unpredictable and challenging!

Balancing Act: Kids, Activities, and the Search for Sanity

Meanwhile, the kids have been out of school, and as you can imagine, cabin fever has set in. They’ve been driving each other, and sometimes me, a little crazy! To burn off some of that boundless energy and foster their social connections, I’ve re-enrolled Ryley in dance, and Avery will soon be starting karate or another activity. Ryley recently informed me, with all the earnestness of a child, that they “need kid friends.” Apparently, momma’s company isn’t always cool enough, and I completely get it! Finding engaging activities for them is essential, not just for their development, but for maintaining a semblance of peace in our household.

Family First: A Time for Support and Gratitude

Beyond the everyday bustle, we also faced a significant family event last month. My wonderful mom underwent thyroid surgery. It was a relief, and an immense blessing, that my in-laws were visiting at precisely that time. Their presence allowed me to offer support to my mom during her recovery while GG and Pa showered the kids with attention. They probably spent even more time with the little ones than they anticipated, but they absolutely adored every moment. Having that invaluable family support during a challenging time truly highlighted the importance of connection and looking out for one another.

Rediscovering My Creative Spark: The Blog’s Comeback

And me? Well, I’m doing okay. I’ve genuinely missed blogging, missed the creative outlet it provides, the joy of writing, capturing beautiful images, and connecting with all of you. There was one day recently when I found a burst of energy and completely revamped my blog—the entire site! I’m still working out a few minor kinks, but it was an incredibly rewarding experience. I poured my heart into it and loved every minute. It reignited a passion I realized I had deeply missed. Hi, my name is Kelley, and I’m a big blog nerd.

Then, just yesterday, I finally got to do what I love most: create a new recipe! This time, I experimented with Wolf® Brand Chili, and it meant I could finally pick up my camera again. My trusty camera had been sitting on my dresser for about a month, just staring at me. I could almost hear it thinking, “Hey, remember me? Yeah, let’s get back together.” It felt so good to get back into the kitchen, behind the lens, and develop something truly special. And the recipe? Oh my goodness, y’all. It’s a game-changer!

Introducing the Star: Southwest Crock Pot Stuffed Peppers

First off, this recipe is SO incredibly easy to make. Seriously, minimal fuss, maximum flavor. Second, it’s a crock pot meal, which immediately elevates its status to “busy weeknight hero.” Third—and arguably most important—it’s absolutely delicious! I’ve made stuffed peppers many times before, but this rendition takes the classic to a whole new level. The secret? Incorporating Wolf® Brand Chili instead of traditional ground beef or turkey. This simple swap not only adds an incredible depth of rich, savory, and perfectly seasoned flavor, but it also cut the prep time almost in half! And let’s be real, Wolf® Brand Chili has its roots right here in Texas, so as a proud Texas girl, of course, I’m a huge fan!

The Joy of Slow Cooking: Benefits for Busy Lifestyles

The beauty of a slow cooker cannot be overstated, especially when life gets hectic. Imagine throwing a few ingredients into a pot in the morning, setting it, and coming home to the comforting aroma of a perfectly cooked meal. That’s the magic of the crock pot! It transforms simple ingredients into tender, flavor-packed dishes with minimal effort, making it ideal for busy families, meal prepping, or simply when you want to enjoy a delicious dinner without being chained to the stove. This Southwest Stuffed Peppers recipe truly embodies that convenience, allowing you to reclaim precious time without sacrificing a wholesome, hearty meal.

Tips for Perfect Stuffed Peppers & Variations

  • Bell Pepper Selection: Choose firm, colorful bell peppers (red, yellow, orange work beautifully) that can stand upright. Larger peppers are easier to stuff.
  • Rice Matters: Using non-instant rice is key for the right texture and absorption in the slow cooker. It will absorb the chili and water perfectly.
  • Customize Your Filling: While Wolf® Brand Chili is fantastic, feel free to add other ingredients to the mix. A pinch of cumin or smoked paprika can enhance the Southwest flavor. You could also include finely diced onions or a touch of green chiles for extra kick.
  • Cheese, Please: Don’t skimp on the cheese at the end! Cheddar, Monterey Jack, or a Mexican blend all work wonderfully to add a creamy, melty finish.
  • Serving Suggestions: These stuffed peppers are a complete meal on their own, but they pair wonderfully with a simple side salad, a dollop of sour cream or Greek yogurt, or a sprinkle of fresh chopped avocado.
  • Make Ahead: You can prep the bell peppers and mix the filling the night before. Store them separately in the refrigerator, then assemble and cook in the crock pot the next morning.

Southwest Crock Pot Stuffed Peppers

Yield:
4 servings
Prep Time:
5 minutes
Total Time:
3-6 hours

Ingredients

  • 4 large bell peppers (any color)
  • 1 can (15 oz) Wolf® Brand Chili (no beans, or with beans if preferred)
  • 1 1/2 cups uncooked long-grain white rice (not instant)
  • 1 can (15 oz) Southwest corn, drained
  • 1-2 cups water (or low-sodium chicken broth)
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped (for topping, optional)

Instructions

  1. Carefully cut the tops off the bell peppers. Remove and discard the seeds and membranes. Rinse the inside of the peppers.
  2. In a medium bowl, combine the can of Wolf® Brand Chili, the uncooked rice, and the drained Southwest corn. Mix thoroughly until all ingredients are well incorporated.
  3. Evenly scoop the chili and rice mixture into each hollowed-out bell pepper, filling them generously but not overflowing.
  4. Place the stuffed peppers upright in your crock pot. Pour 1 to 2 cups of water (or broth) into the bottom of the crock pot, ensuring there’s enough liquid to cover the bottom but not immerse the peppers.
  5. Cover the crock pot and cook on LOW for 4-6 hours, or on HIGH for approximately 3 hours, or until the rice is tender and the peppers are softened to your liking.
  6. During the last 5 minutes of cooking, sprinkle the shredded cheese over the tops of the stuffed peppers. Replace the lid and allow the cheese to melt until gooey and bubbly.
  7. Carefully remove the peppers from the crock pot. Let them cool slightly before serving. Garnish with fresh cilantro, if desired. Enjoy your delicious Southwest Crock Pot Stuffed Peppers!
